Roast potatoes



  1. Put the roasting tin in the oven at 180C (fan).
  2. Peel the potatoes and cut them into evenly sized pieces.
  3. Put the potatoes in a large pot and fill with enough water to cover them.
  4. Add salt to the water, put the pot on the heat and bring it to a rolling boil. When boiling, reduce the heat to a vigorous simmer and leave uncovered for 2 minutes.
  5. Add your fat or oil to the oven tray and put back in the oven for a few minutes to heat up.
  6. Drain the potatoes into a colander and shake it to fluff up the sides.
  7. Sprinkle with flour and shake until evenly coated.
  8. Add the potatoes to the hot oven tin and roll until coated with oil.
  9. Spread them into a single layer.
  10. Cook them for 15 minutes, turn them, cook them for another 15 minutes, turn them, and then cook them for 10-20 minutes until golden and crisp.
  11. Serve with salt.
