Roast potatoes
Ingredients
- 1kg roasting potatoes
- 100ml olive oil (but you can use 100g duck/goose fat if nobody is vegetarian!)
- 2 tsp flour
- salt
Method
- Put the roasting tin in the oven at 180C (fan).
- Peel the potatoes and cut them into evenly sized pieces.
- Put the potatoes in a large pot and fill with enough water to cover them.
- Add salt to the water, put the pot on the heat and bring it to a rolling boil. When boiling, reduce the heat to a vigorous simmer and leave uncovered for 2 minutes.
- Add your fat or oil to the oven tray and put back in the oven for a few minutes to heat up.
- Drain the potatoes into a colander and shake it to fluff up the sides.
- Sprinkle with flour and shake until evenly coated.
- Add the potatoes to the hot oven tin and roll until coated with oil.
- Spread them into a single layer.
- Cook them for 15 minutes, turn them, cook them for another 15 minutes, turn them, and then cook them for 10-20 minutes until golden and crisp.
- Serve with salt.
