Siu yuk
Not a recipe so much as a few hastily scribbled tips:
- Boil skin-down for 15 minutes with just skin and a little fat covered.
- Poke skin. You can get a tool with multiple prongs, or just use a fork.
- Leave overnight.
- Season the skin by rubbing in salt, pepper, and a little distilled vinegar.
- Crank oven up to max for last 10 minutes of cooking and/or fry skin down until bubbling stops.
