Maple biscuits
Ingredients
- 2.5 cups all purpose flour
- 2 tsp baking powder
- 0.25 tsp salt
- 225g butter, room temperature
- 1 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 tsp maple extract
Method
- Whisk together the flour, baking powder and salt in a medium bowl
- In a larger bowl, beat together the butter and sugars until light and fluffy
- Beat in the egg and maple extract until combined
- Beat in flour in several additions until just blended
- Divide dough into two balls and flatten each ball into a disc
- Wrap each disc in cling film and chill for 1 hour
- Preheat oven to 190 (fan 170) degrees
- Roll out a disc onto a lightly floured surface until approximately 1/3 inch thick
- Cut out with cookie cutter and place on lined baking sheet approximately 1 inch apart
- Repeat the above two steps using the reverse of the cookie cutter and the other ball
- Bake for 8-10 minutes until edges start to brown
- Cook for a few minutes and then transfer to wire racks to cool completely
